Tortilla desserts – alternative uses for tortillas

Anyone else have family who don’t get that excited about you trying different recipes?  The OH isn’t a great fan of my new recipes, but sometimes you just have to try them, and they turn out well or not.  For summer I hate being stuck in the kitchen cooking hot puddings, so we tend to have a lot of strawberries and ice cream, eton mess, quick easy fruit tarts etc.  But I had some stand and stuff tortillas and thought I’d make them sweet rather than savoury.

Let’s just say, the OH and N didn’t even try them, and my brother also turned his nose up. But it was quite tasty, and if you’ve a couple left over in a pack, you can easily use them up and avoid having to waste them.  Let’s face it, they’re not so different to pancakes, so they couldn’t really go wrong.

I decided on an Eton mess style tortilla pudding.   We love Eton mess, and it’s such an easy and quick dessert to make.  Strawberries, a bit of strawberry or raspberry coulis to swirl through, broken meringues and cream.  I usually bulk out the cream with a bit of mascarpone for extra richness.  It also gives a bit of depth and less sweetness against the meringue.  I also had some blueberries and raspberries so threw those in as well.

I did heat up the tortillas slightly in the microwave but not too much otherwise the cream mix will melt to nothing.  Once I had the whipped cream and mixed in mascarpone ready, it was just a case of assembling and then eating.  A quick, easy and filling dessert, with plenty of healthy fruit in.

I think it’s a great dessert for a party for children because you can just set out various bowls of different fruits, sauces and toppings and everyone can dip in and make their own.

If you want to try different variations, why not try one of the below dessert themed flavours.

  • Eton mess – strawberries, broken meringue, compote or coulis for a bit of sauce swirled through and whipped cream/mascarpone mix
  • Raspberry ripple – raspberries, raspberry coulis and whipped cream or ice cream
  • Black forest – broken up chocolate brownie or cake, cherry pie filling, cream
  • Apple pie – apple sauce, cream, swirl of toffee sauce
  • Rhubarb and custard – stewed rhubarb and custard (cold or hot)
  • Tropical – chopped mixed tropical fruit, whipped cream, and sauce of choice
  • Key lime pie – broken chocolate cookies, whipped cream with a bit of lime zest and juice swirled through
  • Rocky road – broken biscuits, raisins, glace cherries, mini marshmallows, whipped cream, chocolate sauce

An alternative dessert if you’ve only got normal flour tortillas, is a fruity lasagne.  Just layer up chopped fruit – In autumn try apples and blackberries, in summer try peaches, pears and blueberries, sprinkle over a few chocolate chips, then normal flour tortillas in a shallow dish, top with some marshmallows and grill for a while until the marshmallows have melted and gone gooey.
