Easy microwave custard cream fudge recipe

Try this custard cream fudge, with a hint of childhood flavours.

I wanted to try something a bit more different with this fudge flavour. Yes, custard cream fudge.  Actually it was only custard fudge really, but add some cut up bits of custard cream biscuits on top for some crunch makes it into custard cream fudge.

Because you want to get the hint of yellow, white chocolate is essential for this fudge. You need to be able to taste the custard powder through it too. With this fudge, having the custard powder in for the flavour, it can taste a bit dry compared to other slightly more gooey fudges. But the bonus is, you can’t eat as much in one go, and it’s more stable when out of the fridge for a longer time.

As with most recipes, I’m quite relaxed about the ingredients. It’s very much to taste, so once you have the base, you can add in extra custard powder if it needs more of that custard hit rather than a hint of.

Adding a little vanilla extract gives it less of a white chocolate and a more rounded flavour. Otherwise it’s just sweetened condensed milk and white chocolate. Easy.

If you’re in the UK, stick with the Birds custard powder – the original make it up with milk, rather than the instant add water type. For those outside the UK, custard is a very British dessert sauce – vanilla based, which most people opt for the ready made or instant version. If you can get it, you need the add milk, original custard powder.  It might work with instant custard powder but I didn’t try that.

If you want more yellow, you could add some food colouring. I like the Wilton gels* as they’re really concentrated and you only need a couple of drops. If using add to the fudge when you’ve melted the chocolate into the condensed milk, along with the custard powder.

Making custard fudge

Ingredients

  • 397g tin sweetened condensed milk
  • 400g white chocolate
  • 2 tsp vanilla extract
  • 1 tbsp custard powder
  • Optional yellow food colouring
  • Optional custard cream biscuits

To make the fudge

1, In a microwavable bowl, melt the chocolate and condensed milk together by microwaving in short bursts, stirring,  until the chocolate is melted. It sould be coming away from the bowl sides when ready

2, Add the custard powder and vanilla extract and stir in.  If you need more custard flavour, add more in.

3, If using, add the food colouring.

4, Spoon into a 20x20cm baking tin lined with parchment or baking paper. Press quartered custard cream biscuits into the top if using for decoration.

5,  then chill until set in the fridge for about 2 hours before cutting into small squares
