Toasted coconut fudge recipe – tastes like Bounty!

Get the taste of summer tropics in a sweet treat, try this toasted coconut fudge recipe

One of my favourite chocolate bars is a Bounty – anyone else remove the chocolate with your teeth first, then eat the coconut inside after? So I wanted to try making a coconut fudge to see if I could get that taste. It turns out that yes you can with a toasted coconut fudge recipe.

Coconut always makes me think of summer. With the ingredients being mostly dry, this fudge sets really well. Unlike many easy condensed milk fudge flavours, you can leave it out of the fridge for a while without it melting a bit.

If you’re worried about the sweetness, don’t. It’s not got that sickly Bounty chocolate flavour as you’re not adding extra sugar. Just the desiccated coconut which I toasted, but you could leave as is if you want.

With just 4 ingredients, and melting the chocolate with the condensed milk in the microwave, it’s really easy and fast. It took around 1.5 minutes to melt fully before I added the coconut in. Then refrigerated for around 2 hours to set it before cutting up.

If you just want the flavour without the slight texture of desiccated coconut, you can use coconut extract (just replace the vanilla extract instead). Or you could just chop up Bounty chocolate and stir that into the melted chocolate and condensed milk mixture. Push some into the top before setting as well.

If you’ve got friends who love coconut, then why not pop some in a cellophane bag or pretty tin and give it as a gift. Or just treat yourself…I only made half the amount, but wish I’d made more. I think this will be on my favourites list in future.

How to make toasted coconut fudge

Ingredients

  • 397g tin of sweetened condensed milk
  • 450g milk chocolate chips or block broken up (you could use white if you prefer, or a mix of milk and dark)
  • 1-2 tsp vanilla extract
  • 50g desiccated coconut (or shredded)

Instructions

1, In a cold dry frying pan medium heat, fry the coconut over a medium heat until lightly brown and toasted. Keep a watch on it because it will go brown quickly if you don’t keep checking.

2, Put the condensed milk and chocolate in a microwavable jug or bowl, add the vanilla extract and microwave in short bursts until the chocolate is melted. Stir each time you check.

3, The fudge should be thicker and coming away from the edge of the jug when it’s ready.

4, Leaving some of the coconut to top the fudge, add it into the mixture and stir until well combined.

5, Spoon the fudge into a baking paper lined 20x20cm (or 8 inch) shallow brownie tin.

6, Sprinkle the toasted coconut over the top and press in lightly to make sure it sticks.

7, Put the tin in the fridge for around 2 hours for the fudge to set.

8, Remove when set, take out using the baking paper and cut into small squares.
