Get a zingy lemon flavour with the crispness of meringue in this easy fudge recipe
Put the condensed mllk and chocolate in a microwavable bowl or jug. Microwave in short bursts until the chocolate is melted
Add the lemon curd when the fudge is thickening, and the icing sugar, and beat in.
Break in the meringues, leaving a handful for topping. Stir in
Spoon into a baking paper lined tin with the paper up the sides of the tin so you can remove the fudge easily afterwards
Top with the remaining meringues and push in a little to make them stick
Put in the fridge to set for around 3 hours
Remove from the tin and cut into small squares
Store in the fridge to keep it well set.
If you'd prefer, you can use lemon extract - replace the lemon curd with 1-2 tsp of extract. If using more, add another 50g of chocolate.
You can add food colouring - keep to concentrated versions where you only need a tiny drop to colour it, rather than liquid.
