Simple sausage casserole that you can just through any veg into
Preheat oven to 200C
Brown the sausages in a little oil in a frying pan on the hob. Put the sausages in a casserole dish
Quickly fry off the onions with the carrots and celery, so they're softened and add to the dish with the sausages.
If using bacon or pancetta, add to the pan and fry until cooked, add to the dish
Add the rest of the ingredients and mix around
Cover and cook in the oven for an hour until all the veg are cooked through.
Additional veg chopped can be added - swede, parsnip, potatoes. Just peel and chop up, adding to the casserole dish at the start.
