An easy microwave, no chocolate, peanut butter fudge recipe
Put all ingredients except icing sugar in a microwavable bowl, heat until butter is melted and everything is mixed in together.
Sieve in the icing sugar and beat it in. The mixture should be thickening. Add more sugar little by little if it’s not thickening, or put back in the microwave a bit longer
Mix in peanuts if you're using them.
Spoon the fudge into a 20x20cm tin lined with greaseproof baking paper and put in the fridge for 3 hours to help it set further
Remove from the fridge, chop into squared and eat
Store in the fridge for up to 2 weeks
