Easy three ingredient scones

Scones aren’t the most difficult food to bake, and they are fast, taking only around 10 minutes to bake. But maybe you haven’t got all the ingredients in, or need to use up other ingredients you’ve got. Three ingredient scones could be the answer, and they don’t take much longer to cook.

Now, they’re never going to be the same texture or height that you get from a standard scones recipe. But they do the job, and I had no complaints from either the OH or teen. That’s always a bonus.

3 ingredient scones recipe

The three ingredients are simply plain flour (all purpose), lemonade and double cream (heavy cream). I always have cream around, and quite often it gets a bit close to the use by date, so these scones are handy to be able to use up the cream. I buy lemonade for special occasions for mixers, then it rarely gets used, so again, it’s handy to have, although you don’t need much out of a 2 litre bottle. Just make sure it’s not gone flat.

Make three ingredient scones

Ingredients:

  • 4 cups of plain flour
  • 1 cup of lemonade
  • 1 cup of double cream.

There’s no blenders or mixers required, and the mix only takes a spoon to mix, and then move to hands to bring it together to a dough.

You don’t even need a rolling pin.  Just bring the dough together, smooth out the uneven folds where possible, and flatten it slightly to around 2cm thickness.  This doesn’t have additional raising agents in, so you don’t want to knead it, or work it too much.  Just shape the edges into a neater edge. Then you can use a cutter to make the rounds.

Move them gently onto a lined or greased baking sheet.

I brushed the tops with milk, but did find they still took a while to lightly brown a little. In our aga, the timings were a bit of guess work as it runs hot. But in a 200C/1800C fan oven, they should be cooked in 15 minutes.  Alternatively can also use an air fryer, 170C air fry for 15 minutes.

Once baked, leave to cool slightly on the baking sheet. Then either eat warm (I’m a jam first, then clotted cream second), or transfer to a wire baking rack to cool.

Storing scones

Scones don’t keep very well even in an airtight container, so they need to be eaten within a day to taste their best. 

Can you freeze scones?

Yes, you can freeze baked scones after cooling in an airtight container for 3 months. Just defrost at room temperature for couple of hours then reheat at 150C for 10 minutes.
