Meal Planning Monday: 4th March 2013
We’re here again on meal planning Monday. I have to say, after a few months of being at home and having to cook every night, it’s really hard to keep thinking of interesting meals to cook quickly – whether that be with an impatient toddler, or needing to get something cooked on a nursery day while we bath him and put him to bed to ensure we’re not eating at some ridiculously late hour.
I try to get everything prepped earlier in the day which is fine when I’m not at work, but I’m going to have to be really organised once I’m back at work next week, remembering to defrost meat etc so we can get cooking as soon as I get home. Annoying as that’s time I want to spend with N, but there’s no canteen at the new place so it’ll be main meals in the evening again.
All I can say is thank you to Jamie Oliver’s quick meal books, as they are really quick and simple.
This week’s menu:
- Monday – Roasted pork tenderloin with mash and veg. We had this a few weeks ago and the pork is so much better cooked like this than in the pan. Easier to get it cooked through.
- Tuesday – Salmon en croute
- Wednesday – Chicken fajitas
- Thursday – at a conference I think and have no idea about timings yet, so hoping OH will sort out tea (sausages)
- Friday – Macaroni cheese
- Saturday – Cottage pie
Puddings will include: meringues, raspberry steamed pudding (Rachel Allen), syrupy & pastry pudding (can’t remember what Nigella calls it, but it’ll depend on me remembering to defrost the pastry!
