Make this easy microwave strawberry and cream fudge recipe
In our house we’re split on flavours. I’m all about chocolate when it comes to ice cream or milkshakes. N always chooses strawberries. So after trying a few chocolate based fudge flavours, I thought I’d try a strawberry fudge recipe.

As always I used the microwave to melt the chocolate and condensed milk together. It’s the fastest way, only taking a couple of minutes, to get the fudge into the container and in the fridge for chilling.
With this easy fudge you can’t add too much liquid ingredients otherwise you end up having to add more and more chocolate to make it set. So I decided to get the strawberry flavour with dried strawberries fruit snacks as that’s what I had in the larder. You could just use freeze dried strawberries.
I did swirl through a little jam – it really needed a bit more to add visible swirls but did help the flavour. You could add a couple of tiny drops of red food colouring (I use Wilton* which is really concentrated) then swirl it through before putting the fudge into set. Or you can make the fudge in 2 batches and turn one pink to make strawberries and cream two tone fudge.
To get the impact of the strawberries pieces, you’ll want to use white chocolate in this fudge. This does make it really sweet, so don’t cut the pieces too large.
I usually make half the amount of fudge by using half the condensed milk tin, but if you’re using a full tin you want to use a 9 inch / 20 cm square baking tin, lined in baking paper or parchment. Silicone baking trays should also work to set the fudge in.
How to make easy strawberry fudge
Ingredients
397g tin sweetened condensed milk
450g white chocolate chips
2 tsp vanilla extract
3-4 packs of dried strawberry drops (like Frootz or Fruitbowl)
Optional 1 tbsp strawberry jam (remove any large strawberry lumps). If using, add 50-100g extra white chocolate
Instructions
Microwave the chocolate, condensed milk and vanilla in a microwavable bowl in bursts, stirring each time, until the chocolate is melted.
The fudge will be smooth and coming away from the sides of the bowl when stirred.
If using stir in the jam and swirl through.
Stir in the strawberry drops. Then spoon the mix into a baking paper lined 20cm square baking tin.You can sprinkle over more drops for decoration and press in lightly to help them stick.
Chill in the fridge for 2-3 hours until set, then remove from the tin and cut up the fudge into squares.

Recipe Notes
If you add jam you need to increase the chocolate by a further 50-100g.
If you increase it a lot, remember to check your tin or container as you only want the fudge about 1-1.5 cm deep to make sure it sets all the way through.
